A long-standing Sears family favorite that even our toddlers enjoyed. The recipe makes one thick 8-inch pancake, or several smaller ones.
* 1 cup (or more) shredded zucchini
* 1 egg
* 1-2 tbsp. whole wheat flour
* ½ tsp baking powder
* Dash of sea salt
* 1 tbsp. sunflower or sesame seeds (for children over four)
* Fruit spread or mild salsa
Stir ingredients together just until mixed. Pour the batter onto a preheated buttered griddle. Before flipping the pancake, sprinkle on sunflower or sesame seeds, if desired. Serve with fruit spread or salsa topping.
